The Gimlet started life as a rough and ready scurvy cure in the British navy. This slightly more refined version is flavoured with a cordial made with blackcurrant leaves foraged by Nick Strangeway from the botanical heaven that surrounds the village of Hepple in Northumberland.

Freeze for one and a half hours and then pour into frozen martini glasses, or pour over ice and top with soda or Champagne. Garnish with a lemon twist.
