This is a wet martini, meaning a ratio of 2/3 gin to 1/3 vermouth which allows the complex dry vermouth botanicals two be noticed.
Nettle gin is dry and deeply earthy, ranging form sweet pale pink to a dark amber depending on the time of year they are picked.
The vermouth recipe is built on a beautiful organic natural wine; Pegase blanc from Domaine de L’epinay. It has a wide bouquet of bitter roots, flowers, herbs, spices and fruits, most of which are foraged from our local area. 
The drink is brightened with seville orange bitters and tied together with a drop of salt. 
The martini comes ready to drink, just chill the bottle for an hour for so and ideally chill your glass too then garnish with a pickled nettle leaf.

Ingredients: Gin, nettle leaf, dry vermouth (natural white wine, for herbs see label, sugar) orange peel bitters, seasalt.

500ml makes 5 drinks.
